Summertime Eggplant - look what we have!

Summer is in full swing, and so is our summertime harvest! This year, we have two special eggplant varieties: Calliope and Indian.

Calliope Eggplant is a beautiful small oval-shaped fruit with a unique variegated white and purple pattern. It has a firm texture and a mild taste, making it perfect for sauteing, grilling, roasting, or baking. It's also excellent for dips like baba ganoush or in dishes like eggplant parmesan.

Our Indian Eggplant is small and oval-shaped with a glossy, smooth, dark purple skin. The term "Baby" comes from the fact that Indian eggplants resemble tiny globe eggplants. Fully grown, Indian eggplants are only about two inches long, roughly the size and shape of a large egg, making them ideal for quick whole cooking. They have a mild taste with sweet notes and a creamy texture when cooked.
